Sous Chef, Guernsey

Hours: Approximately 45 hours per week

About the Role

This is an exciting opportunity to join a well-established and popular coastal inn in Guernsey, renowned for its welcoming atmosphere and commitment to delivering quality food and excellent customer service. Working closely with the Head Chef, you will play a key role in the day-to-day running of the kitchen, ensuring high standards are maintained while supporting and developing the wider kitchen team.

The successful candidate will be a hands-on and motivated chef with previous experience in a similar environment. You will be confident leading the kitchen in the Head Chef’s absence and committed to maintaining excellent food quality, hygiene standards, and operational efficiency throughout service.

Duties for this role include, but are not limited to:
• Supporting the Head Chef with the daily management of kitchen operations.
• Deputising for the Head Chef during days off, holidays, and other absences.
• Preparing and delivering high-quality dishes in line with established standards.
• Ensuring compliance with all Environmental Health Office requirements.
• Maintaining HACCP procedures and food safety records.
• Upholding Health & Safety and food hygiene standards at all times.
• Assisting with stock control, ordering, and cost management.
• Supporting menu planning and kitchen organisation.
• Leading, motivating, and mentoring junior members of the kitchen team.
• Ensuring effective communication between kitchen and front of house teams.
• Monitoring portion control and minimising food wastage.
• Maintaining high standards of cleanliness throughout the kitchen.

The Ideal Candidate

The ideal candidate will have previous experience in a Sous Chef or senior chef position within a busy hospitality environment. They will possess a strong understanding of HACCP, food hygiene, and health and safety requirements, with relevant certifications being highly desirable. You will be a strong communicator with excellent people management skills, a positive attitude, and the ability to lead by example. A flexible and good-humoured approach, combined with sound cost-control awareness and a good command of the English language, will be essential for success in this role.
