The Role
They are looking for a driven Chef de Partie (or strong Demi ready to step up) to run a key kitchen section—such as the hot section, sushi, grill, or larder. You will execute traditional Japanese techniques and maintain impeccable culinary standards during fast-paced services.
Key responsibilities include:
• Section Control: Managing your station to ensure consistent quality, presentation, and strict cleanliness.
• Culinary Execution: Preparing and plating authentic Japanese dishes with flawless flavor balance.
• Menu Input: Collaborating with the Head Chef on daily specials and creative dish innovation.
• Leadership & Safety: Mentoring junior kitchen staff while enforcing Level 2 food hygiene and HACCP standards.
• Kitchen Efficiency: Monitoring stock levels and proactively minimizing food waste.
What They Are Looking For
• Japanese Culinary Expertise: Strong experience in sushi/sashimi preparation and precise Japanese knife skills.
• Menu Knowledge: Familiarity with dashi, miso, ramen broths, teriyaki, and yakitori techniques.
• Composure: Confidence handling fresh fish and premium ingredients calmly under intense service pressure.
