Sous Chef / Senior Sous Chef | Established Guernsey Hotel

We are seeking a skilled, passionate, and organized Sous Chef / Senior Sous Chef to join a senior kitchen team in a prominent Guernsey hotel. Supporting the Head Chef and Senior Sous, you will play a pivotal role in managing dual kitchen operations and delivering a high-standard dining experience across both restaurant and bar settings.

This is a "second-in-command" role designed for a leader who thrives in a fast-paced environment and takes pride in mentoring the next generation of culinary talent.

The Role
As Sous Chef, you will be an integral part of the senior management team with responsibilities including:
• Kitchen Management: Taking control of a dedicated kitchen section, including stock management, food ordering, and strict adherence to allergy and safety protocols.
• Creative Input: Actively participating in menu engineering, dish development, food trials, and tastings.
• Team Leadership: Supervising and training junior staff and new recruits to ensure a safe, hygienic, and efficient workflow.
• Operational Excellence: Managing profitability calculations, supplier relationships, stock rotations, and ensuring 100% compliance with food hygiene and safety regulations.
• Service Ownership: Stepping up to lead full service across both kitchens during designated shifts.

Who We Are Looking For
The ideal candidate will combine technical expertise with strong leadership qualities:
• Experience: A minimum of 2 years’ experience in a Senior Chef de Partie (CDP) role or higher.
• Technical Skill: Deep knowledge of various cooking methods, equipment, and international cuisines.
• Pressure Management: The ability to remain calm, organized, and effective in a high-stress, busy environment.
• Standards: A natural commitment to maintaining a clean, orderly, and hygienic workstation at all times.
• Team Spirit: Excellent interpersonal skills and a "team-first" attitude.
